About the Producer:
This coffee is produced by the Salaverria family, led by José Antonio Salaverria and his sons, Andrés and José Antonio Jr. They are sixth-generation coffee producers in El Salvador, known for their commitment to quality, lot separation, and continuous innovation. Their coffees are processed at Beneficio Las Cruces, the family’s central mill, where they have refined their approach over many years.
Processing Method:
This lot is processed using the family’s double-soaked method, designed to create a cleaner and brighter cup profile:
- The coffee is first fermented under water for 12 hours until the mucilage begins to break down.
- It is then rinsed and washed in clean water.
- The coffee is soaked again for another 10 hours.
- Finally, it is dried on patios to preserve clarity, sweetness, and balance in the cup.
About the Farm:
San Felipe is one of the Salaverria family’s medium-sized farms, with 38 hectares planted at around 1700 meters above sea level. The family has built a strong reputation for producing expressive, high-quality coffees through careful farm management, thoughtful processing, and a long-term commitment to quality.
