About the Producer:
Linarco Rodríguez represents a new generation of producers in Palestina, Huila, combining inherited knowledge with innovation and a strong commitment to quality. His family has grown coffee for more than 50 years, and over the past decade they shifted from traditional regional varieties toward more distinctive cultivars in pursuit of exceptional cup quality and Cup of Excellence performance.
Processing Method:
This lot is a natural Bourbon Sidra, processed to highlight sweetness, fruit intensity, and aromatic complexity:
- Ripe cherries are selectively harvested by hand.
- The coffee undergoes a 90-hour closed-barrel fermentation.
- It is then dried for 28 days.
- Finally, the lot is stabilized for 15 days before final preparation.
About the Farm:
Finca San Gabriel is located in Palestina, Huila, at 1,710 meters above sea level. It is a third-generation farm with more than 50 years of coffee history. Around ten years ago, the Rodríguez family began planting special varieties beyond the regional norm, with the goal of competing at the highest level. Their commitment was rewarded in 2021, when one of their coffees achieved second place in the Cup of Excellence.
