About the Producer:
Linarco Rodríguez is a dedicated coffee producer from Palestina, Huila, who has worked with coffee since childhood. In 2014, after inheriting the land from his parents, he began focusing fully on specialty coffee. Motivated by the potential of unique varieties and experimental processing, he has worked with different companies, developed his cupping skills, and learned processing methods through hands-on experience. Today, he produces coffee using various methods and also manages processing across other farms.
Processing Method:
This lot is produced as a honey coffee with careful fermentation and drying:
- Ripe cherries are selectively handpicked and immersed in water to remove floaters.
- The coffee is depulped by machine and fermented in mucilage for 24 hours in hermetically sealed barrels.
- It is then dried in a marquesina for 15 days.
- Finally, the coffee is stabilized for an additional 15 days before milling.
About the Farm:
La Esperanza is a third-generation family farm in Palestina, Huila, where coffee has been cultivated for around 50 years. About a decade ago, the family shifted toward planting more distinctive varieties in order to participate in the Cup of Excellence. For the past seven years, they have been active competitors, achieving an impressive second place in 2021.
