The Producer

Nestor Lasso is one of Colombia’s most exciting young coffee producers. From Pitalito, Huila, he began training as a cupper at just 14 years old and later helped transform his family’s traditional coffee farm into one focused on exotic varieties, innovative fermentation, and meticulous processing. Today, his coffees are recognised for their extraordinary intensity, clarity, and distinctive sensory profiles.

The Rare Variety

Ombligón — Spanish for “belly button” — is a rare and distinctive coffee variety named for the characteristic dimple found on the bean. It has become particularly associated with exceptional lots from Huila, where producers such as Nestor Lasso have shown its remarkable potential for intense fruit, florals, sweetness, and complexity.

Processing Method

This special version builds on El Diviso’s intensive Ombligón natural process, with an additional mango infusion that pushes the coffee even further toward tropical fruit and candy-like aromatics:

• 100% handpicked ripe cherries, floated to remove defects
• Controlled fermentation designed to build sweetness and aromatic intensity
• An additional mango infusion enhances the coffee’s tropical fruit character
• Careful oxidation and temperature management develop complexity and depth
• Drying begins in a marquesina and is completed under controlled conditions to achieve optimal moisture and stability

The Farm

Finca El Diviso is a third-generation family farm in Bruselas, Pitalito, Huila, founded around 28 years ago by José Uribe Lasso, Nestor’s father. Originally planted with traditional varieties, the farm changed direction around seven years ago as Nestor began introducing exotic cultivars and completely rethinking fermentation and processing. Their work has earned major recognition, including 6th place in the Cup of Excellence and 3rd place in Chicago in 2024 with an Ombligón lot.

This is the already explosive personality of El Diviso Ombligón taken firmly into tropical territory. The mango infusion intensifies the variety’s naturally fruit-forward character, creating a cup dominated by ripe mango and mango candy, followed by strawberry, guava, passion fruit, and juicy tropical sweetness. Elegant white florals keep the profile lifted, while vanilla and white-chocolate-like sweetness add a creamy foundation. The result is intensely aromatic and unmistakably fruit-driven, with a silky mouthfeel, vibrant acidity, and a long, clean, candy-like finish.
