Following displacement caused by Colombia’s armed conflict, Yadimir rebuilt his life in Pitalito, Huila, and gradually turned coffee from an unfamiliar livelihood into a long-term family project.\u003c\/p\u003e\n\u003cp\u003eHis approach is centred on continuous learning, careful variety selection, and increasingly precise fermentation and drying. It first became famous through exceptional competition coffees from Urrao, Antioquia, and was initially assumed to be a mutation of Caturra. More recent genetic work has challenged that explanation: research on the Chiroso group found Caturra Chiroso to be genetically separate from conventional Caturra and connected instead to Ethiopian landrace material.\u003c\/p\u003e\n\u003cp\u003eThis unusual background helps explain why Chiroso can combine jasmine-like florals and bright citrus with greater sweetness and body than many delicate floral varieties.
